Preheat the oven to 190˚ C. Line a baking sheet with parchment paper and set aside.
In a medium bowl, whisk together the flours, salt, cocoa powder, and baking soda until fully combined.
In a separate bowl, beat together the honey, coconut oil or unsalted butter, ¼ cup of Sugar N Spice peanut butter, egg, and vanilla extract until fully combined.
Using a spatula, mix the dry and the wet mixtures until fully incorporated. Set aside.
Remove the peanut butter from the fridge. Grease your hands with a bit of coconut oil or butter
Take around 2 tbsp of cookie dough and flatten between your palms. Place around 2 tsp of peanut butter in each then roll the chocolate cookie dough over the peanut butter to close.
Place the cookies on the prepared baking sheet. Refrigerate for 5 minutes before baking.
