The Best Peanut Butter Cookies !!

Cookies dough

  • 1 cup oat flour (make your own oat flour by grinding rolled oats in a food processor)
  • 1 cup whole wheat flour
  • ½ tsp salt
  • ½ cup unsweetened cocoa powder
  • ¾ tsp baking soda
  • ½ cup natural honey
  • ½ cup coconut oil or unsalted butter, melted and slightly cooled
  • ¼ cup Sugar N Spice peanut butter
  • 1 large egg
  • 1 tsp vanilla extract



  • 1 ¼ cups Sugar N Spice peanut butter, refrigerated for 30 minutes.



Step 1

Preheat the oven to 190˚C. Line a baking sheet with parchment paper and set aside.

Step 2

In a medium bowl, whisk together the flours, salt, cocoa powder, and baking soda until fully combined.

Step 3

In a separate bowl, beat together the honey, coconut oil or unsalted butter, ¼ cup of Sugar N Spice peanut butter, egg, and vanilla extract until fully combined.

Step 4

Using a spatula, mix the dry and the wet mixtures until fully incorporated. Set aside.

Step 5

Remove the peanut butter from the fridge. Grease your hands with a bit of coconut oil or butter

Step 6

Take around 2 tbsp of cookie dough and flatten between your palms. Place around 2 tsp of peanut butter in each then roll the chocolate cookie dough over the peanut butter to close.

Step 7

Place the cookies on the prepared baking sheet. Refrigerate for 5 minutes before baking.

Step 8

Bake for 10 minutes. The cookies will be soft at first so let stand on baking sheet for 5 minutes, then move to wire racks to cool and slightly harden. Enjoy with a cup of milk, coffee, or tea!
