- 4 tbsp coco-nuts spread

Prepare the Batter: In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mix together the milk, egg, melted butter (or coconut oil), and vanilla extract until well combined.
Slowly pour the wet mixture into the dry ingredients, stirring gently. Be careful not to overmix, just stir until the ingredients are combined.
Allow the batter to rest for 15 minutes. This will ensure your pancakes are maximally fluffy.
